If you’re looking for a quick and healthy meal this weekend, try out this recipe for salmon cakes from Fitness Magazine. I adapted the recipe below a bit from the original, but I’m sure they’re both delicious!

Also if you’re looking for more info on the issue of Fitness Magazine that this recipe came from as well as a run-down of a variety of other women’s health magazines, check out Brooklyn Fit Chick.

Salmon Cakes

6 oz. water packed salmon, drained

1/2 cup panko bread crumbs

2 eggs

1/4 c. finely chopped red onion

1 clove garlic

Dressing + Salad

2 teaspoons lemon juice

1 teaspoon Old bay Seasoning

6 tablespoons Nayonaise

salt and pepper to taste

about 6 cups spinach

  • Pulse salmon, onion, breadcrumbs, garlic, eggs, salt and pepper together in a food processor. After the ingredients are blended well, form into six patties. Form into 3 patties.
  • Coat a medium skillet with olive oil spray and brown patties over medium heat, about 3 to 4 minutes on each side.
  • In a blender, combine nayonaise, lemon juice, Old Bay Seasoning, cayenne, salt and pepper to taste. If you prefer a thinner dressing, add a splash of water and blend.
  • Place mixed salad greens on a plate and top with salmon cakes; drizzle with dressing and a splash of lemon juice.
Makes 2 servings.
