As you probably can see from my latest posts, I can’t get enough of Fitness Magazine. It has always been one of my favorite magazines and that sentiment was cemented when I had t
he opportunity to visit their headquarters in New York City a few weeks ago.
If you’re looking for a quick and healthy meal this weekend, try out this recipe for salmon cakes from Fitness Magazine. I adapted the recipe below a bit from the original, but I’m sure they’re both delicious!

6 oz. water packed salmon, drained
1/2 cup panko bread crumbs
1/4 c. finely chopped red onion
1 clove garlic
Dressing + Salad
2 teaspoons lemon juice
1 teaspoon Old bay Seasoning
6 tablespoons Nayonaise
salt and pepper to taste
about 6 cups spinach
- Pulse salmon, onion, breadcrumbs, garlic, eggs, salt and pepper together in a food processor. After the ingredients are blended well, form into six patties. Form into 3 patties.
- Coat a medium skillet with olive oil spray and brown patties over medium heat, about 3 to 4 minutes on each side.
- In a blender, combine nayonaise, lemon juice, Old Bay Seasoning, cayenne, salt and pepper to taste. If you prefer a thinner dressing, add a splash of water and blend.
- Place mixed salad greens on a plate and top with salmon cakes; drizzle with dressing and a splash of lemon juice.
