Sensible Snacking

This is a great snack or side dish. If you’re feeling snack-y this is a good option because chickpeas are full of filling protein. You can also play around with the flavor combinations and try out new spices to make this snack all your own.

Crispy Chickpeas
1 can (15 oz) chickpeas, drained
1 tsp. cayenne
2 tsp. cumin
1 tsp. olive oil

Preheat oven to 450 degrees. My oven runs a little cool, so just keep an eye on the chickpeas while they’re cooking.

Place all ingredients in bowl and mix until coated. Place on cooking sheet and cook for about 20-30 minutes or until crisp. UPDATE: Make sure you don’t leave the chickpeas unattended and shake up the pan frequently so that they cook evenly.

Remove from oven and let cool. Enjoy!

Makes about 4 servings.
