Leftovers No More + Giveaway Winner!

As you might know, I’m participating in Food Network’s Brown Bag challenge (read more below-you can participate too!) and even though I am pretty good about bringing my lunch every day, there have been times when I let leftovers…get left over.

But ever since I started to bring my lunch to work about a year ago, I’ve been able to get creative with what’s left in fridge. Most of the time I have to get creative with leftovers, since my man friend works at a certain social networking company that provides them with perks galore.

Anywho, last night I had egg noodle soup for dinner and there was a bunch left over, so I added some veggies and tah-dah! Lunch for tomorrow.

Since we’re all headed back to work today, here are a few ideas for what to do with those leftovers!

Leftover List

Fruit-Freeze it and throw it in a smoothie.

Wine-Use it to sautee onions or make a sauce base…or make sangria! This sangria recipe is one of my favorites.

Vegetables-Mix with eggs to make a veggie scramble, frittata or omelette. I also like the idea of letting the eggs get “stuck” in the veggies like Ashley from The Edible Perspective.

Anyway, if you have any creative ways that use leftovers, I’d love to know-please share below.
