A Frappucino Every Day

I wasn’t really sure what to post today so I’ll keep it short and simple.

As you might know I’m in love with xanthan gum and I’ve been experimenting with it ad nauseum.

Although I have never consumed a Starbuck’s Frappucino, they’ve always looked yummy to me but…

a) I’m lactose challenged and have cut soy milk out of my diet (ahem, please start offering almond milk or even coconut milk, Starbucks)

b) The grande frappucino with 2% milk and no whipped cream has 290 calories and SIXTY FIVE grams of sugar. Not something you want to drink every morning.

Yesterday I was craving something cold and caffeinated, so I decided to experiment and make my own frappucino. It’s really easy, low-cal and you know what’s in it. Plus it’s lactose free! I think it’d also taste great with some chocolate protein powder thrown in if you’re going for a mocha flavor.

At Home Frappucino

1/2 cup steeped, cool coffee (I just brew it in the morning and let it sit-you can also make coffee ice cubes as well by freezing coffee in an ice tray)

3 ice cubes

a splash of almond milk

2-3 packets of stevia

1/2 teaspoon xanthan gum

1. Combine almond milk, stevia, ice cubes and coffee in blender. Blend until smooth.

2. With blender running, add xanthan gum through top little by little until mixture thickens.

    • Thanks-Drinking one right now on my walk to the office-I too am a xanthan gum a holic. It just makes everything that much more amazing. Let me know if you try out the recipe!

      • So a little bit of Jillian a little bit of my med school friends. Apparently too much soy is not good for you-it raises estrogen levels. I decided to hedge my bets and not drink soy milk-plus I discovered that I like the taste of almond milk.
